Mexican shrimp cocktail is a unique fusion of Mexican and seafood flavors, distinguished by its zesty, tomato-based sauce infused with lime juice, cilantro, and often a touch of spicy jalapeño. It’s a delightful example of how Mexican cuisine incorporates fresh, vibrant ingredients and bold flavors into a popular seafood dish.
Ingredients:
- 1 pound (450g) cooked shrimp, peeled and deveined
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1/2 cup diced cucumber
- 1/4 cup chopped fresh cilantro
- Fresh juice of 2-3 lemons
- 1/4 cup tomato juice or clamato juice
- 1 jalapeño pepper, finely diced (adjust to your spice preference by removing seeds and veins)
- 1 avocado, diced
- Salt and pepper to taste
- Tortilla chips & soda crackers for serving
Preparation:
- In a large bowl, combine the diced tomatoes, red onion, cucumber, cilantro, and jalapeño pepper.


- Add the cooked shrimp to the bowl and gently toss everything together.
- In a separate small bowl, mix the lime juice and tomato (or clamato) juice. Pour this mixture over the shrimp and vegetable mixture.
- Gently fold in the diced avocado.
- Season the cocktail with salt and pepper to taste. You can adjust the seasoning and spice level by adding more salt, pepper, or jalapeño if needed.

- Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve the Mexican shrimp cocktail in individual glasses or bowls, garnished with extra cilantro if desired, and with tortilla chips on the side.

- You can make some chipotle mayo dressing and also serve in Mexican Tostadas (oven-baked toasted tortillas). Finally, don’t forget your favorite ‘cerveza’ to pair this great dish!
