This cabbage soup is ideal for those looking to loose some weight for it’s high content of fiber. You can add other of your favourite vegetables and you will never eat the same soup each time.
Ingredients:
- 1/2 head large cabbage, julianned
- 2 tomatoes, finelly chopped
- 1/2 onion,finelyy chopped
- 2 red peepers, julianned
- 2 carrots, cut in cubes
- 1 liter of chicken or vegetable broth
- 1 small can of tomatoe puré (optional)
- 2 tbsp olive oil
- 2 tbsp. vegetable or chicken mix in powder
- Salt and pepper to taste
Garnishes:
- Avocado, diced
- Lime juice
- Feta cheese, crumbled
- Cilantro leaves, chopped
- Red or green hot salsa
Preparation:
In a large soup pot sauté the onion with 2 tbsp. of olive oil; once the onion changes colour add the rest of the vegetables and tomatoe puré, stir for about 5 minutes.
Add the liter of chicken or vegetable broth and cook over medium heat for approximately 10 more minutes or until the vegetables are soft. Bring to simmer; season with 2 tbsp. of vegetable or chicken mix, salt and pepper to taste.
Enjoy alone, with some feta cheese and avocado on top. For extra flavour add some lemon juice, cilantro leaves and red or green salsa for some picante!
