Crêpes with dulce de leche sauce and fruits

Dulce de leche is a popular confection in Latin America. It is made by slowly heating sugar and milk for several hours until getting a thick sauce which can be used as a spread on bread or cookies, or as a filling on many pastries. For this recipe we are using a dulce de leche from Argentina found at “El gaucho” a butchery and Latin America products’ store north of Toronto. Many large grocery stores in Canada carry dulce de leche spreads imported from different countries; find it in the ethnic or baking products aisle.

Cranberry & cream cheese flan

Flan is a custard topped with caramel. It is a very popular dessert in Spain, Latin America and Caribbean countries. There are endless varieties of flans. Mexican flans start from a similar base mixture: whole eggs, sweetened condensed milk, evaporated milk, sugar and vanilla extract. This flan was made with cranberry sauce and cream cheese, a celebration of our Mexican-Canadian heritage.

La Marquesa-style Mushroom soup

La Marquesa is a national park situated in the State of Mexico, about an hour from Mexico City. It is the perfect place for a weekend road trip. Hiking, camping, fishing, pony or horseback riding, ATV or quad biking, go karting, zip lining, paintball, are just a few of the many activities available in the area for every taste and budget. The area is also full of restaurants know for their traditional La Marquesa-style mushroom soup, mushroom quesadillas in blue corn tortillas, green chorizo quesadillas, cecina tacos (dried meat tacos), fried trout and many more.

This scrumptious Tex-Mex burrito is paired with a Molcajete salsa. Molcajete is a type of mortar made of volcanic stone, very popular in Mexico to make all sorts of salsas, but if you don’t have a molcajete or other type of mortar at home, simply put all the ingredients in the food processor and pulse for a few seconds to get a chunky texture salsa.
