- 4 large tomatoes, diced
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 bell pepper, diced
- 4 eggs
- 2 tablespoons olive oil
- 1 cup of cheddar in small dices
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Preparation
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onions and cook until translucent, about 5 minutes.
- Add the diced tomatoes, green bell pepper, and red bell pepper to the skillet. Cook for another 5-7 minutes, until the vegetables are soft.



- Sprinkle the red pepper flakes, salt, and pepper over the vegetables and mix well.
- Make 4 wells in the vegetable mixture and crack an egg into each well.
- Cover the skillet with a lid and cook for another 5-7 minutes, until the eggs are cooked to your desired level of doneness.
- 2 minutes before ready, add the chopped cheese dice.


- Sprinkle with chopped parsley before serving.
- Serve hot with crusty bread or pita.
