Pizza base:
Store bought or homemade dough
Sauce:
Follow our italian-style homemade tomato sauce recipe.
Toppings:
- Sun dried tomatoes, julienned
- 1 sliced zucchini
- 1/2 small onion, julienned
- 2 small peppers (green, red, yellow or orange for colour), julienned
- pickled jalapeños, sliced (optional)
- olive oil
- salt and pepper to taste
- mozarella cheese, shredded
Preparation:
Slice the sun dry tomatoes and soak in arm water for 10 minutes. Meanwhile, in a skillet fry the onion and peppers with 2 tbsp. of olive oil at medium heat until the onion is cramelized. Salt and pepper to test. Reserve.
In a separate skillet fry the zucchini slices with 2 tbsp. of olive oil at medium heat for 5 minutes. Salt and pepper to test. Reserve
Preheat oven at 400F.
Spray a pizza pan with cooking oil. Put the dough in the tray and add the tomato sauce. Top with caramelized onions, peppers, zucchini slices, sun dry tomatoes and cheese.
Cook for 10 minutes at 400F.
Increase the temperature at 450F and cook for 2 more minutes at broil function.
Remove the pizza from the oven and top with pickled jalapeño slices. Enjoy!
