A true staple of Mexican cuisine, well known all around the world; pico de gallo salsa can be used as a garnish on top of molletes, as side with fried chicken breast, grilled beef, fish tacos and many more dishes.
- 1/2 small onion, finely chopped
- 2 tomatoes, finely chopped
- 1/2 lime, the juice
- 1 or 2 jalapeño pepper, (fresh or pickled), finely chopped (optional)
- 2 tbps. cilantro leaves, finely chopped
- a pinch of salt to taste
In a small bowl pickle the onion using lime juice and a pinch of salt; let rest for 10 to 15 minutes.
Add the tomatoes, jalapeño, cilantro and it’s ready to enjoy!
