Coleslaw

Ingredients:

  • 1/4 of a large cabbage head, finely grated
  • 2 medium size carrots, finely grated
  • 1 cup of mayonnaise
  • 5 tbsp. dijon mustard
  • 4 tbsp. of sugar
  • 1/2 cup of cream cheesse or milk (can substitute for almond or soy milk)
  • 3 tbsp. apple cider or white wine vinegar
  • The juice of 2 limes
  • 2 teaspoons of salt
  • Pepper to taste

In a large bowl mix the mayonnaise, creme cheese or milk, vinegar, lime juice, mustard, sugar, salt and pepper and whisk until well blended. Incorporate the cabage and carrot, mix all ingredients.

Enjoy as a side dish with schnitzel, fried chicken, Baja-style fish tacos, fish and chips or chicken wings!
