This easy to make chicken breaded burger is a great quick option for a weekend lunch. Enjoy with your favourite toppings and a side of coleslaw, potato salad or french fries.
Ingredients:
- 1 chicken breast
- 1 cup of breadcrumbs
- 1 cup of all purpose flour
- 2 eggs, whisked
- Salt and pepper
- Dry herbs: dry basil or dry italian spices
For the burgers:
- Buns
- Tomato slices
- Onion slices
- Lettuce
- Regular or vegan mayonnaise
- Mustard
- Ketchup
- Dill pickles
- Pickled jalapeños
- Mozzarella cheese or american cheese slices
Sides:
- Coleslaw
- Potato salad
- French fries
Preparation:
Divide the chicken breast in 4 to 6 pieces that fit your burger buns. Flaten each piece with a mallet as thin or thick as you wish.
Season the chicken with salt and pepper.
In a deep plate put all purpose flour.
In a separate deep plate put the whisked egg.
Use a third deep plate to put the breadcrumbs and dry herbs of your choice.
Coat the chicken breast first with flour, then dip in egg wash and finaly coat with breacrumbs.
Heat vegetable oil (about 1 inch) in a skillet at high heat. Fry the patties on both sides until golden brown. When ready, transfer to a plate with paper towels to remove excess oil.
In the oven: preheat at 400F. In a baking pan place the chicken patties, spray cooking oil on both sides. Cook for 20 minutes or until golden brown.
Assemble hamburgers with your favourite toppings and enjoy with a side of coleslaw, potato salad or french fries.
