This is the best way to eat your greens for breakfast!
Ingredients for the scrambled eggs with green beans (for 2 persons):
- 1 lb. green beans, chopped in 1/2 inch pieces
- Water, enough to boil the green beans
- 1 small onion, finely chopped
- 4 eggs
- 3 tbsp. milk (can use dairy, oat, soy or almond milk)
- 4 tbsp. of olive oil, margarine or butter
- salt and pepper to taste

Preparation:
In a pot add green beans and water; boil until the green beans are fully cooked. You will noticed that they change colour and some open to release the seeds. Drain water and reserve. Pro tip: for a better flavour avoid blanching or cooking green beans al dente.
In a skillet fry the onion with the olive oil (margarine or butter) for a few minutes until the onion is caramelized; add beans and fry for 5 more minutes.
In a small bowl whisk the eggs with the milk, salt and pepper. Add the eggs mixture to the beans and onions; cook for 5 to 8 minutes or until the eggs are cook through. Pro tip: covering with a lid ensure fluffily eggs.
Serve with a side of delicious warm green chilaquiles. Top with a green hot salsa.
You can also serve as a side dish, try them with roast beef!
