Looking for a healthy option for dinner? Trying to go vegan but don’t know where to start? Everybody in your family will love this simple yet flavorful mushroom vegan tacos made with guajillo peppers’ sauce.
- 2 lbs. mushrooms, chopped in small cubes
- 1 small onion, julienned
- Guajillo peppers’ sauce, get recipe here
- Corn tortillas
- 2 tbsp. olive oil
- Salt and pepper to taste
- onion, finely chopped
- cilantro leaves, finely chopped
- Lime juice
Prepare guajillo peppers’ sauce (get recipe here).
In a skillet sauté onion and mushrooms in 2 tbsp. of olive oil; salt and pepper to taste. Add guajillo peppers’ sauce and let simmer for 20 to 30 minutes until liquid evaporates.
Warm tortillas in a comal or large pan. Assamble tacos and garnish with onions, cilantro and some lemon juice.
