Potato and leek soup

With only two main ingredients, this soup will be your on your family’s cookbook for generations to come. Not only it’s an easy to make sou;, it’s affordable and as we use all the white and green parts of the leek there is no food waste.

Ingredients (makes 4 servings):

  • 1 medium size leek, finely chopped (include white and green parts)
  • 2 large baking potatoes, diced
  • 1 1/2 liters of water
  • 2 tbsp. vegetable mix broth or chicken broth in powder
  • 1 tbsp. salt
  • a pinch of pepper

Preparation:

In a large bowl soak in water the leek, finely chopped, swirl a few times to remove dirt, drain the water and do the same procedure 2 more times to ensure all dirt in between the leek’s layers is completely removed.

In a sauce pan add the potatoes and leek. Cover with one and a half liters of water. Season with vegetable mix or chicken broth in powder, salt and pepper. Cook at medium temperature for approximately 20 minutes or the until the potatoes are tender and the green parts of the leek change to a darker colour.

Garnish with avocado, feta cheese and red sauce (optional).
