Fish fillets with red bell peppers and white wine sauce

Elevate your fish fillets with this luxurious red bell peppers and white wine sauce which is very easy to make. You will never cook fish the same way again! Enjoy with a side of zucchini and corn with feta cheese on top.

Ingredients (makes 4 servings):

  • 4 fish fillets (mahi-mahi, tilapia or halibut fish work well for this recipe)
  • 1 tsp. paprika
  • 1 tsp. pepper and dry lemon spice
  • Salt to taste

For the sauce:

  • 3 medium size red bell peppers cut in quarters
  • 3 garlic cloves
  • 1/4 onion
  • 1/4 cup white wine
  • 1 tsp. garlic in powder
  • 1 tsp. paprika
  • 1 tsp. dry basil
  • Salt and pepper to taste

Preparation:

Preheat oven at 375F. In a baking pan spray some cooking oil. Place the fish fillets, brush with olive oil and season with salt, paprika, pepper and dry lemon spices. Cook for 1 hour at 375F.

In a baking pan spray some cooking oil, place the red bell peppers, onion and garlic cloves. In the oven: roast for 25 minutes at 375F or until vegetables get charred. Using the air fryer: select Air fry function at 380F for 20 minutes.

When ready, blend in the food processor the peppers, onion and garlic cloves with 1/4 cup of white wine. Put some olive olive oil in a sauce pan at medium heat; transfer the mix and bring to simmer. Season with paprika, dry basil, dry garlic, salt and pepper. Cook for 10 more minutes.

Serve fish fillets with sauce on top and a side of zuchinis and corn, garnish with some feta cheese crumbles.
