Mango, lemon & mint paletas (ice pops)

Spring warm weather calls for some frozen treats. If you don’t have popsicle molds, simply use a bowl to freeze the blended mixture and make granita instead. Either way, all your family will love this easy-to-make dessert.

Ingredients:

(Makes 6 popsicles)

  • The pulp of 4 large mangos
  • The juice of 1 large lemon
  • A bunch of mint
  • 4 tbsp. of maple syrup
  • 1/4 cup of water

Preparation:

Mix and blend the mango pulp, lemon, mint, maple syrup and water. Pour the blended mixture into popsicle molds; leave a little space at the top for expansion. Let the popsicles freeze overnight or at least 6 hours until they are completely firm.

If you are making granita, pour the blended mixture into a medium size freezer-proof bowl. Let the mixture freeze overnight or at least 6 hours. Take it out of the freezer, let it sit at room temperature for about 10 to 15 minutes to soften, then scrape and place the granita in small cups and enjoy!
